Hanoi behind the Scene: Full Day (L/D)

Get ready to see Hanoi as very few others do. This tour is the perfect blend of iconic cultural sites of Hanoi and offbeat districts to sample some genuine local life. The guide meets you in the hotel lobby and off we go. After a short car transfer to the South of Hanoi through a busy urban area, we veer off the main road and enter a very special district. It suddenly feels like stepping back in time, into the 1960’s when Hanoi was a quaint capital populated mostly by modest workers. Wander around these narrow alleys covered with many colourful market stalls. Feel this incredible vibe and let the guide tell you the story of these funny big yellow blocks. We have a coffee break before transferring to the temple of literature. For lunch, we suggest to walk to a nearby street food shop. There are several options, our favourite would be the Bun Cha flame-grilled pork meat served with sticky rice noodles. In the afternoon, we continue on to the garden of the Presidential Palace, also the place of the one-pillar pagoda and the house on stilts where Ho Chi Minh lived. Back to the hotel to refresh before continuing our gastronomic adventure in the Old Quarter.

The Old Quarter of Hanoi is a bubbling gold mine for just about anything, but above all, food. Follow your guide on a walking tour to some temples of Hanoian food. Discover different cuisines, experience various atmospheres and have fun! We start our walk from the northern edge of Hoan Kiem Lake, where we have a Nom as a starter. A kind of local salad. We then stroll around the former Cau Go street market and reach a very narrow alley where we sample our second treat. Few people, even Hanoians, actually know about this well-kept secret of Hanoi’s food culture: a delicious fish-roll filled with pork and mushroom. We continue walking, along the way you will see numerous street food stalls, including one of  the most popular Pho noodle soup shops in the Old Quarter, and stop for a refreshment break at a sidewalk bia hoi. Bia hoi is an institution of Hanoi, sort of local pub serving fresh beer from the keg to the glass. Sit for a little while, and enjoy a beer as you watch the passers-by. The last stop is a rice wine tavern, also serving traditional ethnic dishes from the mountains of North Vietnam.

Vietnam is definitely a noodles-country with no less than 6 different types. Trying all 6 in a single meal would be too much. So we have selected three noodle-based dishes, leaving aside the classic bun cha, bun bo or pho soup as those are easy to find on your own at almost every corner of the city centre. rather we are going to take you on a nice urban walk to sample some other popular dishes. We start from the covered market of Dong Xuan, passing the “under-the-railway zone” and reaching the charming little Hong Phuc Street, where we will try some banh da with fish. Banh Da is a flat brown noodle made from rice often served with seafood. We continue our walk to the second spot, another little street called Yen Ninh where we have some mien with eels. Mien are called glass noodles, translucent and made from starch. Last but not least, we will try the famous pho noodles, the same ones used in the iconic soup of the same name. You will discover different ways to prepare these noodles, sautéed or rolled with beef and veggies. Truc Bach peninsula is full of these specialised pho food shops, and this will be the perfect place to end the tour.

Day 1: Hanoi – Hang Kia – Ban Buoc (-/L/D)

This is a 4-hour drive, including a leg-stretching break en-route, to the mountainous plateau of Hang Kia. Hang Kia is on H’mong ethnic lands, a remote village known for its plum trees and the beauty of their flowers. You have lunch at a local home, and will be treated on traditional H’mong delicacies. For this meal and the other in the mountainous area, we will dine in the local way: several dishes of meats and vegetables are served at once with rice and broth on the side.

This is an introduction to Hmong culture and batik design, offering a rare insight into the richness of the Hmong culture in a warm and friendly family environment. After the workshop, you will bring back your hand-made Batik cloth as a memory of H’mong unique crafts. Ethnic Adventure in Mai Chau: 3 days

Day 1: Hanoi – Mai Chau (-/L/D)

You will be picked upp at your hotel in Hanoi. We will exit the city and head West towards the Laos border. It takes about 4 hours to reach the valley of Mai Chau.

We leave Mai Chau town behind and travel a few kilometres farther to a remote valley. We reach a a charming village, where lunch is served at a traditional family run guesthouse.

In the afternoon, we travel across the valley by either leisurely walking or cycling its backroads for a first encounter with the Thai culture and its people. The small pathways take us along rice fields and vegetable gardens. We shall meet with farmers on their way to the fields or the children taking the buffaloes out. We end the afternoon at the other edge of the valley in a seluded nature lodge. Get refreshed by the swimming pool and have some rest before dinner.

Day 2: Mai Chau – Hang Kia – Mai Chau (B/L/D)

We depart from the lodge after breakfast on a 90 minute drive to the heights of Hoa Binh province and the rocky plateau of Hang Kia. The scenery changes as we rise in elevation. Plum trees and corn fields replace the rice paddies. We enter H’mong ethnic lands, where people are colourfully dressed and living in wooden ground floor homes.
We are welcomed by a local H’mong family, whom we will do a traditional Batik workshop with. Learn ancestral techniques and unveil the secrets of the H’mong fabric. We have lunch at the local home, an opportunity to discover a little more about the H’mong culture through their food.

In the afternoon, we will take a 3-hour downhill hike back to the valley of Mai Chau. The hike is scenic, on single trails and rather easy (can be a bit slipery in wet weather). Walking down offers great views over wild stretches of land nestled between the mountains. The journey ends in a sub-valley of Mai Chau, where our vehicle awaits to transfer us back to the lodge (about 20 minutes). If you prefer not to do the hike, the car will drive you back from Hang Kia to the lodge in the afternoon. Enjoy some time by the swimming pool and end the day at your own leisure.

Day 3: Mai Chau – Hanoi (B/L)

After breakfast and check-out, we start our way back to Hanoi. Our first stop after a few minutes will be to visit the local Mai Chau market (or continue on if you prefer). Our next stop will be at Hoa Binh town, where we explore the Muong ethnic culture through the visit of an impressive cultural space. This is an unique place created by a local artist who preserved on 5 hectares of land a huge collection of objects and several traditional houses from the Muong culture (Hoa Binh is the only province in Vietnam where the majority of people are from an ethnic minority, the Muong).

After our visit, we have a lunch there and then hit the road again to reach Hanoi in the mid-afternoon.
